To liaise closely with the food and beverages department on various operational and cost related issues
To perform the costing for recipes and menus prepared by Executive Chef and suggest the selling price.
To perform random test counts in the stores to prepare daily flash report of food cost
To prepare PNL statement for major events
To verify daily outlet revenue summary
To verify daily outlet void control sheets
To verify outlet’s open item report to see that correct pricing has been applied and take necessary actions in input the recurring items in POS system.
Random and schedule test the inventory of outlet by reconciling the opening stock with closing stock, taking accounts of usage and sales
To transfer POC micros revenue data and run the potential usage report
To verify daily receiving report
Prepare costing of invoices for imported item.
To review and verify spoilage and to perform market survey for necessary amendments to contracts once in a six month
Prepare inventory various report and cost controller reports
To advise all concerned, raise alarms when expenses and costs are higher and are not in line with the revenues generated
Verification of all Food and Beverage discounted checks are justified, properly recorded into POS system and to prepare utilization report for Management.
